At this point the sheet of wine is paper thin and can breathe in Oxygen and exhale the carbon dioxide. Then during the pour, the wine gets bubbled and mixed with air. This double aeration process both mellows the feel of the wine and also fully blooms and enriches the bouquet and flavor of every glass of wine. The old style decanters only hold one bottle of wine and take at least an hour to fully aerate.
